Very recently, kombucha has become one of the hottest things to hit people that are health conscious. Kombucha is a fermented drink made from tea. First recorded in Asia more than 2000 years ago. Kombucha is created by “culture mass” called Symbiotic Colony of Bacteria and Yeast (in short – SCOBY), and all SCOBY’s are unique in their own way.
Fermented tea with friendly bacteria needed by the stomach to keep the gut healthy, also known as probiotics. Kombucha is largely classified as a functional beverage, this means it is a non alcoholic drink that contains vitamins, amino acids and other nutrients associated with health benefits, all starting with gut health.
Kombucha tea has fewer calories and less sugar than juice or sodas. Plus it contains natural acids & antioxidants to promote fat loss & increase metabolism.

We very often mix and match these pairings because these are our favourite ingredients. They play so beautifully together! We’ll just hodgepodge a bunch of delicious fruit together to make a flavouring. It’s not unlikely to find a bottle of passionfruit, raspberry, pineapple or ginger in our fridge. And it is not hard to come up with something interesting that will please your tastebuds when you start with a basis of quality ingredients.
We don’t measure when we puree or juice my fruit, so none of our flavour combos have a set “recipe.” We adjust based on our taste preferences, so we recommend that you rely on your tongue to dictate your recipe.
As a general guideline, we like to use about 1/4 – 1/3 cup of puree/juice per 500ml bottle.
This is a riff on GT’s Trilogy recipe, but I think homemade is better, if I do say so myself!

To understand the current state of Kombucha and it’s growing market potential, it is important to place a critical lens over the drink’s long history and its surprising informative pivots.
Kombucha is a live product full of probiotics and yeast. The fermentation process starts with a SCOBY (pancake-shaped symbiotic culture of bacteria and yeast), which we at LUV EARTH place in organic rooibos tea, slightly sweetened with unrefined brown sugar. It is then left to ferment at room temperature for a few weeks. The probiotics and yeast will continue to consume the sugar, tea, and caffeine, making the drink more and more acidic until it reaches the required pH. It is now ready for consumption. (The antimicrobial properties of this process make its production process sanitary and safe for brewing under controlled/hygienic conditions).
If algae like strings appear in Kombucha, it just proves that the process is still “alive and at work”, indicating excellent quality. Drain it if you want to before use, with an ordinary sieve. (Fruit added to kombucha and left to ferment even more for a few days, starts to be bubbly! Be careful to not close the lid too tightly as pressure will build up.)
Maybe you would rather do a lot of things before guzzling some bacteria down your throat, but research indicates that the “good” bacteria inside kombucha and other probiotics can lead to a lot of health benefits. Some of these benefits include improving one’s digestion, promoting a healthy liver and has many other nutritional perks, weight loss, boost immunity, helps the body to detoxify all in a natural way.
So just how much kombucha should you drink? Too much of anything is bad for you, of course. The Centres for Disease Control recommends that 240ml of kombucha can be safely consumed during a day. Enjoy with your water intake (5-8 glasses water is healthy) or any fruit juice. Just add your preferred amount to it to change the taste of your daily water. (Remember that you shouldn’t consume more than about 240 ml of kombucha a day).
Kept refrigerated, kombucha has an extraordinary long shelf life due to low ph. Typical Kombucha ranges between pH of 2.8 and 3.2. For comparison, typical pH for natural clean water is 7 and the pH of lemon juice is about 2.

Start with a few sips to get used to the flavour. The first few times you drink Kombucha, stick to 110ml (Shooter Cup included with Bottle) 2x per day.

Kombucha originated in Northeast China (historically referred to as Manchuria) around 220 B.C. and was initially prized for its healing properties. Its name is reportedly derived from Dr Kombu, a Korean physician who brought the fermented tea to Japan as a curative for Emperor Inkyo. Eventually, the tea was brought to Europe as a result of trade route expansions in the early 20th century, most notably appearing in Russia (as “Kambucha”) and Germany (as “Kombuchaschwamm”). Despite a dip in international popularity during WWII due to the shortage of tea and sugar supplies, kombucha regained popularity following a 1960s study in Switzerland comparing its health benefits to those of yoghurt.
